Ingredients
  • 1 tablespoon olive oil
  • 1 ½ pounds broccoli rabe , cut into 1-inch pieces
  • 3 cloves garlic , chopped
  • 6 large (5 to 6-inch) diameter Portobello mushrooms , stems removed
  • 1 cup Violet Pizza Sauce
  • 6 ounces smoked or regular fresh mozzarella , thinly sliced
Instructions
  1. Preheat oven to 375°F.  In a large skillet, heat oil over medium heat and cook broccoli rabe 5 minutes or until almost tender.  Add garlic and cook 2 minutes or until broccoli rabe is tender.
  2. Arrange mushrooms on a large, lightly oiled baking sheet.  Evenly spoon about 3 tablespoons Pizza Sauce onto each mushroom. Top with broccoli rabe, then cheese.  Bake 12 minutes or cheese is melted.
Recipe Notes

To make these vegan, leave the cheese off or use your favorite plant based cheese.
