Still looking for that winning game day recipe? These French Dip Sliders are stuffed with roast beef, caramelized onions and topped with smoky gouda. They’re super easy to make as you start with deli roast beef and the sliders cook all together on a sheet pan. Top them with savory balsamic onions and gouda for a smoky touch. Serve them with an easy thyme infused au jus for even more delicious flavor.
Caramelizing the onions takes the most time with this recipe. The onions can be done ahead of time and warmed up when needed. Or for a real time savor, replace the caramelized onions with french fried onions.
- 6 tablespoons butter, divided
- 2 large sweet onions, thinly sliced
- 2 tablespoons balsamic vinegar
- 3 sprigs plus 1 tablespoon fresh thyme, divided
- 12 slider buns, halved
- 1 pound thinly sliced deli roast beef
- 8 ounces smoked gouda, thinly sliced or grated
- 2 tablespoons everything bagel seasoning
- 2 cloves garlic, chopped
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce

Preheat oven to 350°.

In a large skillet over medium-high heat, melt 3 tablespoons butter. Add onion and season with salt and pepper. Cook, stirring occasionally, until caramelized, about 15 minutes. Stir in balsamic vinegar and 1 tablespoon fresh thyme leaves and cook 2 minutes or until liquid is evaporated.

Place bottom halves of slider buns on a baking sheet and top with roast beef, caramelized onions, gouda cheese, and slider bun tops.

Melt 2 tablespoons butter and brush on top of buns. Sprinkle everything bagel seasoning over buns.

Bake 10 to 15 minutes or until cheese is melted and sliders are warmed through.

While sliders are baking, make au jus. Add remaining 1 tablespoon butter to same skillet and melt over medium heat. Add garlic and cook 1 minute, then add beef broth, Worcestershire, and thyme sprigs. Simmer 5 minutes. Remove thyme sprigs. Serve sliders with au jus for dipping.
