If one of your New Year’s resolutions was to eat healthier (and really, who doesn’t have a healthy resolution?!) I hope you rang in the New Year with the jolly Green Giant and Mrs. Dash. These two make the perfect pair to set you up for success when it comes to healthy eating.
This recipe for Mediterranean Riced Cauliflower, that I developed for Green Giant and Mrs. Dash, is a super easy and delicious side dish that can also stand on its own. It gets lots of flavor from Mrs. Dash, garlic, and fresh oregano and texture from artichokes and sun-dried tomatoes. Just a little Feta crumbled on top adds a bit of sharpness.
This side dish is lovely paired with some grilled chicken or salmon or toss in some cooked shrimp. Skip the proteins entirely to serve this as a meatless main dish. Make it a little heartier by adding a can of cannellini beans or chickpeas and sprinkle of pine nuts.
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 10-ounce package Green Giant® Riced Cauliflower, thawed and drained
- 2 to 3 teaspoons Mrs. Dash® Original Blend
- ½ cup chopped artichoke hearts
- 1/3 cup chopped sundried tomatoes
- 2 tablespoons chopped fresh oregano
- 2 tablespoons crumbled feta cheese

Heat olive oil in large nonstick skillet over medium-high heat and cook onion 4 minutes or until softened and beginning to brown. Add garlic and cook 1 minute.

Stir in Green Giant® Riced Cauliflower and Mrs. Dash® Original Blend and cook 4 minutes, stirring occasionally, or until vegetables are tender. Stir in artichoke hearts, sundried tomatoes and cook 2 minutes.

Stir in oregano and top with feta cheese. Garnish with oregano sprigs and sprinkle with additional Mrs. Dash if desired.
Note: To make this Vegan or Whole 30 compliant, leave out the Feta.
