It’s just not a Super Bowl party without some kind of food that’s shaped like a football! I developed these adorable little Mini Football Meatloaves for Green Giant using their Riced Cauliflower and Broccoli in the meatloaf mixture to get some extra veggies into your party food. I used oats instead of breadcrumbs so they’re gluten-free too. Then I served them up on a bed of grass-like Zucchini Spirals.
This recipe makes 8 meatloaves, but feel free to make the mixture into 12 or 16 smaller loaves for appetizer portions. You can make them ahead of time and bake them off just before game time.
- 2 pounds ground beef
- 1 12 oz. package Green Giant® Riced Cauliflower & Broccoli, thawed and drained
- 1 egg
- 1 small onion, finely chopped
- 2 cloves garlic, chopped
- ½ cup oats
- 1 15 oz. can tomato sauce, divided
- ¼ cup Worcestershire, divided
- ½ teaspoon salt
- 2 tablespoons brown sugar
- 2 slices mozzarella cheese
- 2 12 oz. packages Green Giant Veggie Spirals® Zucchini, cooked according to package directions, drained and kept warm

Preheat oven to 375 degrees. Combine beef, Green Giant® Riced Cauliflower & Broccoli, egg, onion, garlic, oats, ½ cup tomato sauce, 2 tablespoons Worcestershire and salt. Form into 8 ovals. Arrange on baking sheet

Combine remaining tomato sauce, Worcestershire and brown sugar. Brush loaves with half of sauce mixture. Bake 20 minutes then brush with remaining sauce mixture. Bake 20 minutes or until done.

Cut cheese into 8 thin strips, about 2 inches long and 24 thin strips about 1 inch long. Arrange cheese strips like laces on meatloaves. Arrange Green Giant Veggie Spirals® Zucchini on serving platter and place mini meatloaves on Zucchini Spirals.
For appetizer portions shape beef mixture into 16 mini meatloaves instead of 8. Reduce cooking time by 5 minutes. You will need 16 1-1/2 inch and 48 1-inch thin strips of cheese for laces.
