These are definitely not your ordinary burgers. This recipe for Chipotle Burgers with Carrot and Zucchini Noodles Slaw, that I developed for Mealthy.com, will liven up any barbecue. Inspired by the Vietnamese bánh mì sandwich, these spicy burgers are topped with sour cream and a slightly sweet and sour slaw and served on crusty rolls. The slaw gives these burgers a great flavor crunch when you bite into them.
For the slaw, you can make your own veggie noodles. It really doesn’t take long and it gives the slaw such a fun appearance. If you don’t have a spiralizer, no worries. Veggie noodles are readily available in the produce section of your supermarket. If veggie noodles aren’t your thing, the slaw will taste just as good if you prefer to thinly slice or shred the veggies.
Both the slaw and burgers can be made early in the day. After you spend the day enjoying the beach, pool or whatever you prefer to do on beautiful summer days, just grill the burgers and serve on rolls with the slaw and a nice cold beer.
- 1 1/4 pounds ground beef
- 1 large clove garlic minced
- 1/2 teaspoon chipotle chili powder
- 1/2 teaspoon salt
- 1 small zucchini , spiralized with thin spiral blade
- 1 large carrot , spiralized with thin spiral blade
- 1 large shallot , thinly sliced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 2 teaspoons honey
- 4 crusty rolls or hamburger buns
- 2 tablespoons sour cream , optional

Combine ground beef, garlic, and chipotle chili powder and salt. Form beef mixture into 4 burgers.

Grill burgers, turning once, about 8 minutes or until desired doneness.

Combine the zucchini, carrot, shallot and cilantro in medium bowl; stir in lime juice and honey and season with salt.

Serve burgers on buns and top with sour cream and slaw. Serve remaining slaw alongside burgers.
For spicier burgers add additional chipotle chili powder.
