This 4 ingredient recipe pairs creamy fresh mozz and fresh sweet, spring blueberries with beet noodles, then finishes it off with your favorite balsamic dressing. Beets are actually an easy veg to spiralize, but you can always purchase beet noodles from the product section of your supermarket to make this recipe even easier.
In less then 15 minutes you’ll have a colorful and delicious salad that’s sure to stand out on your buffet table!
- 4 cups fresh beet noodles
- ¼ cup balsamic dressing or glaze , divided
- 8 ounces fresh mozzarella , sliced
- 1 cup blueberries

Fill medium saucepan with water and bring to a boil. Add beet noodles and boil 1 to 2 minutes or until tender-crisp. Place beets in colander and run under cool water to cool remove excess color. Drain well.

Toss beet noodles with 2 tablespoons balsamic dressing.

Arrange beet noodles on serving platter. Arrange sliced mozzarella over beets, then top with blueberries.

To serve, drizzle with remaining dressing.
