It makes a great dip for fruit, cookies or brownies. You can also use it to fill a cake or pipe into mini phyllo cups and top with strawberry slices. Or, you can do what I do and just eat it by the spoonful!

If you don’t prefer a coffee liqueur, you can try substituting your favorite liquor. Chambord, Frangelico or Grand Marnier are all good choices.
- 1 cup heavy cream
- 8 ounces Neufchatel cheese, softened
- 1/4 cup brown sugar
- 1 tablespoon cocoa powder
- 1/3 cup Kahlua

Beat heavy cream in a large bowl with an electric mixture until stiff peaks form; set aside.

Beat softened Neufchatel cheese, brown sugar and cocoa powder in a medium bowl with an electric mixer until smooth. Add Kahlua and beat just until combined.

Stir about one half cup whipped cream into cream cheese mixture to lighten. Gently fold cream cheese mixture into whipped cream. Chill until ready to use.
