Ingredients
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 cup frozen corn, thawed
  • 1 cup ORTEGA® Diced Green Chilies
  • 1 cup shredded Cheddar cheese Monterey Jack cheese
Instructions
  1. Preheat oven to 350˚F. Grease and flour 8 x8- inch baking dish or line with parchment paper.

  2. Combine flour, cornmeal, sugar, baking powder and salt in a large bowl. Mix egg, milk and melted butter. Stir egg mixture into flour mixture just until moistened. Stir in corn, ORTEGA® Diced Green Chilies and cheese. Pour into prepared baking dish.
  3. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes then cut into 2-inch squares. Serve warm with Jalapeno Butter.
