Ingredients
  • 2 Tbsp. Country Crock® Spread
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 8 ounces ham, diced
  • 1 14 oz. can diced tomatoes
  • 2 15 oz. cans black eyed peas, rinsed and drained
  • 1 tablespoon fresh thyme or ½ teaspoon dried thyme
  • 1/8 to ¼ tsp. ground red pepper
  • 1 bay leaf
Instructions
  1. Melt Country Crock® Spread in 3-quart saucepot. Add onion, pepper and garlic and cook about 6 minutes or until vegetables are tender-crisp. Add ham and cook 2 minutes.
  2. Add remaining ingredients and bring to a boil. Simmer 10 minutes. Serve over rice if desired.
