114 to 16-ounce package Green Giant™ Corn Veggie Tots, cooked according to package directions
1cupGreen Giant® Steam Crisp Mexicorn, drained
¾cupshredded Monterey Jack
1/2cupgrated Cojita cheese
1cupshredded lettuce
½cupchopped red onion
Chopped fresh cilantro
Instructions
Preheat oven to 425°F. Combine mayonnaise, lime juice and garlic, set aside.
Arrange cooked Green Giant Corm Veggie Tots on baking sheet. Sprinkle with corn and cheeses. Bake 8 minutes or until cheese is melted.
Top with lettuce and onion and drizzle with mayonnaise mixture; sprinkle with cilantro.
Recipe Notes
Cojita cheese is a Mexican-style grated cheese. It's readily available in most supermarkets. But if you can't find it, feel free to substitute grated Parmesan. It works just as well.
