Reuben Bake with Cauliflower Tots

Ingredients
  • ¾ pound sliced corned beef
  • 1/4 cup Thousand Island Dressing
  • 1 16- ounce package sauerkraut, drained and squeezed dry
  • 4 ounces sliced swiss cheese
  • 1 16-ounce package Green Giant™ Cauliflower Veggie Tots
Instructions
  1. Preheat oven to 425°F. Arrange corned beef in a shallow 8-inch square baking dish. 
  2. Evenly top with dressing, sauerkraut, then cheese. Evenly arrange Green Giant Cauliflower Veggie Tots over mixture.
  3. Bake 25 minutes or until bubbling and Cauliflower Veggie Tots are golden. Serve with additional dressing if desired.
Recipe Notes

Tip:  Be sure to really get as much moisture as you can out of the sauerkraut or the dish will be watery.

 

To make this dish easy to serve, loosely fold thin slices of corn beef into thirds before arranging in baking dish. Or for thicker slices of corned beef, coarsely chop before arranging in dish.
