Pork Pozole

Ingredients
  • 2 pounds boneless pork shoulder , cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 1 large sweet onion , sliced
  • 3 cloves garlic , sliced
  • 1 1/2 teaspoons cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 2 cups chicken broth
  • 1 14 1/2-ounce can diced tomatoes
  • 1 15-ounce can hominy , rinsed and drained
Instructions
  1. Season pork with salt and pepper. Heat oil over medium-high heat in 6-quart saucepot and brown pork. Remove and set aside.
  2. Reduce heat to low and add onion and cook until softened, stirring occasionally, about 4 minutes. Add garlic, cumin, oregano and smoked paprika and cook until fragrant, about 1 minute.
  3. Return pork with its juices to saucepot. Stir in remaining ingredients and bring to a boil over high heat. Reduce heat and simmer covered, until pork is tender, about 45 minutes.
  4. Serve with sliced radish, queso fresco and lime wedges if desired.
