Season pork with salt and pepper. Heat oil over medium-high heat in 6-quart saucepot and brown pork. Remove and set aside.

Reduce heat to low and add onion and cook until softened, stirring occasionally, about 4 minutes. Add garlic, cumin, oregano and smoked paprika and cook until fragrant, about 1 minute.

Return pork with its juices to saucepot. Stir in remaining ingredients and bring to a boil over high heat. Reduce heat and simmer covered, until pork is tender, about 45 minutes.

Serve with sliced radish, queso fresco and lime wedges if desired.
