Chipotle Sweet Potato Fries with Honey Lime Dipping Sauce

Ingredients
  • 1 can Chef’s Joy Butter Flavor Non-Stick Cooking Spray
  • 2 pounds sweet potatoes , peeled and cut into 1/4-inch pieces
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 clove garlic , crushed
  • ½ teaspoon salt
  • 1/4 cup plain nonfat Greek yogurt
  • 2 tablespoon mayonnaise
  • 2 teaspoon fresh lime juice
  • 1 teaspoon honey
  • 1/4 teaspoon grated lime zest
  • 1/4 teaspoon paprika
Instructions
  1. Preheat oven to 425ºF. Spray large baking sheet with Chef's Joy spray.
  2. Toss sweet potato with chipotle chili powder, cumin, garlic and salt. Spread evenly on pan so potatoes are in a single layer. (If potatoes are too crowded, use 2 baking sheets.) Spray evenly with Chef's Joy spray.
  3. Bake 30 minutes turning over halfway through cooking, until potatoes are crisp and beginning to brown.
  4. Combine yogurt, mayonnaise, lime juice, honey, lime zest and paprika in a small bowl. Serve fries with dipping sauce.
