Instant Pot Chicken, Sweet Potato and Kale Soup

Ingredients
  • 1 1/2 pounds boneless skinless chicken thighs or breasts
  • 3 sweet potatoes , peeled and cut into large chunks
  • 6 cups chicken stock or broth
  • 1 14 1/2-ounce can diced tomatoes
  • 1 medium onion , chopped
  • 3 cloves garlic , chopped
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 4 cups fresh baby kale or spinach
Instructions
  1. Arrange chicken and sweet potatoes in instant pot or pressure cooker. Add chicken stock, tomatoes, onion, garlic, chili powder and cumin. Season to taste with salt and pepper.

  2. Lock lid in place, select High Pressure, and cook 10 minutes. Allow pressure to slow release for 10 minutes and then release pressure using quick release.
  3. Remove chicken. Set instant pot to saute or simmer setting and add kale. Shred chicken using 2 forks then add back to pot. Simmer soup 2 minutes or until kale is just wilted.
