It’s April and I feel like i should be posting Spring recipes, but it just doesn’t feel like Spring. So here’s a little comfort food to warm you up.
My recipe for a quick skillet meal…Easy Skillet Lasagna is crazy easy. You might not equate the words ‘quick’, ‘easy’ and skillet’ with lasagna, but that’s what this recipe is about. But just because it’s quick, easy and cooked in a skillet, doesn’t make this lasagna any less delicious. Meat, pasta, cheese and more cheese. Doesn’t get much better.
Once you try this recipe for Easy Skillet Lasagna, you may never go back to making it the traditional way again. The whole dish is cooked in the same skillet so it’s easy to clean up. Simply brown ground beef, then add uncooked lasagna noodles, Victoria Pasta Sauce and water. Jarred pasta sauce you say? I say yes. Victoria Pasta Sauce is absolutely delicious and one of the best shortcuts out there. Simmer all that deliciousness until the noodles are tender then add the cheeses. Couldn’t be easier. And did I mention that this one dish dinner is ready in just 30 minutes and there’s only one pan to clean? Win.Win.Win.

- 1 pound ground beef or turkey
- 1 jar 24 oz. Victoria® Marinara Sauce
- 1 ½ cups water
- 8 lasagna noodles, broken into 2 to 3-inch pieces
- 1 cup ricotta cheese
- 2 tablespoons grated Parmesan cheese
- ¾ cup shredded mozzarella
- Fresh basil leaves

Season ground beef with salt and pepper and brown in large nonstick skillet over medium heat. Drain if desired. Add Victoria® Marinara Sauce and water, stir well. Add broken lasagna noodles and bring to a boil. Cover and simmer 15 minutes, stirring occasionally, until noodles are tender.

Combine ricotta and Parmesan cheeses. Dollop cheese over lasagna and sprinkle with mozzarella. Cover and let stand 5 minutes or until cheese is melted. Sprinkle with basil leaves.
Be sure to use regular, not no-boil, lasagna noodles.
