This Mexican Street Corn Dip, that I developed for Green Giant, is so easy to pull together, it’s perfect for entertaining. It’s a delicious combination of sweet corn, savory Cojita and Queso Fresco cheeses, cilantro, garlic, cumin and lime. Serve it with Green Giant’s Corn Veggie Tots for the ultimate corn flavor, with tortilla chips or just grab a spoon and dig in!

Ingredients
- 1 8 oz. package cream cheese, softened
- 1-1/4 cups mayonnaise
- 1/2 cup crumbled Queso fresco
- 1/3 cup grated Cojita cheese
- 1 11 oz. can Green Giant® Steam Crisp Mexicorn, drained
- 3 green onions, chopped (optional)
- 2 tablespoon chopped fresh cilantro
- 1 tablespoons lime juice
- 2 cloves garlic, crushed
- 1 teaspoon ground cumin
Instructions

Preheat oven to 375°F. Combine all ingredients except Veggie Tots. Turn into a shallow 1-quart baking dish.

Bake 20 minutes or until hot and bubbling. Garnish with additional chopped cilantro and green onion if desired.
