Two favorites, Totchos and Mexican Street Corn, come together in this mash-up recipe for Mexican Street Corn Totchos that I developed for Green Giant. These Totchos double down on sweet corn flavor because they’re topped with corn and typical street corn toppings, and uses Green Giant Corn tots, instead of tater tots, so you’re getting in some extra veggies too.
Add these Mexican Street Corn Totchos to your Cinco De Mayo menu and you won’t be disappointed. The sweet corn tots are delicious on their own, but when you top them with 2 kinds of cheese, Monterey Jack and Cojita, flavorful toppings like onion and cilantro and finish with a garlicky, lime mayo – well, they become irresistible!
- ¼ cup mayonnaise
- 2 tablespoons lime juice
- 2 cloves garlic, crushed
- 1 14 to 16-ounce package Green Giant™ Corn Veggie Tots, cooked according to package directions
- 1 cup Green Giant® Steam Crisp Mexicorn, drained
- ¾ cup shredded Monterey Jack
- 1/2 cup grated Cojita cheese
- 1 cup shredded lettuce
- ½ cup chopped red onion
- Chopped fresh cilantro

Preheat oven to 425°F. Combine mayonnaise, lime juice and garlic, set aside.

Arrange cooked Green Giant Corm Veggie Tots on baking sheet. Sprinkle with corn and cheeses. Bake 8 minutes or until cheese is melted.

Top with lettuce and onion and drizzle with mayonnaise mixture; sprinkle with cilantro.
Cojita cheese is a Mexican-style grated cheese. It's readily available in most supermarkets. But if you can't find it, feel free to substitute grated Parmesan. It works just as well.
