If you’re already thinking about what to do with your leftover corned beef, you’re gonna want to check out this recipe for Reuben Bake with Cauliflower Tots that I developed for Green Giant.
What makes this super easy Reuben recipe even more awesome than the incredible flavor, is that it uses just 5 ingredients and takes about 5 minutes to put it together. Then pop it in the oven and let all the flavors intermingle to create pure deliciousness!
The tots on top take on an amazing texture. The top of the tots are perfectly crispy, but the bottoms soak up the flavors from the dish and give the tots a wonderful, creamy texture.
Finish off with an ice cold beer and you’ve got something close to a perfect meal. Cheers!
- ¾ pound sliced corned beef
- 1/4 cup Thousand Island Dressing
- 1 16- ounce package sauerkraut, drained and squeezed dry
- 4 ounces sliced swiss cheese
- 1 16-ounce package Green Giant™ Cauliflower Veggie Tots

Preheat oven to 425°F. Arrange corned beef in a shallow 8-inch square baking dish.

Evenly top with dressing, sauerkraut, then cheese. Evenly arrange Green Giant Cauliflower Veggie Tots over mixture.

Bake 25 minutes or until bubbling and Cauliflower Veggie Tots are golden. Serve with additional dressing if desired.
Tip: Be sure to really get as much moisture as you can out of the sauerkraut or the dish will be watery.
To make this dish easy to serve, loosely fold thin slices of corn beef into thirds before arranging in baking dish. Or for thicker slices of corned beef, coarsely chop before arranging in dish.
