If you want to add something green to your St. Patrick’s Day menu sans food coloring, check out my recipe for Green Garlic Cauliflower Rice, that I developed for Green Giant. This dish is super easy, it takes about 10 minutes to prep and 10 minutes to cook. It uses only 5 ingredients, yet it’s loaded with great flavor from the garlic, onion, and herbs. I used parsley, chive, and basil but feel free to use your favorite blend of fresh herbs.
A great alternative to potatoes, this recipe is on the lighter side, leaving you more room for corned beef and green beer!

Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, chopped
- 1 12-ounce package Green Giant® Riced Cauliflower & Broccoli or Riced Cauliflower
- ¼ cup chopped fresh herbs
Instructions

Heat olive oil in large nonstick skillet over medium-high heat and cook onion 4 minutes or until softened and beginning to brown. Add garlic and cook 1 minute.

Stir in Green Giant Riced Cauliflower and cook 5 minutes, stirring occasionally, or until vegetables are tender. Stir in herbs.
