When the deep freeze sets in this week, you’re gonna need something warm and cozy, so grab everything you’ll need to make this recipe for a rich, comforting Loaded Potato Soup.
Let’s face it – this decadent and delicious soup, that’s super easy to make, is all about the toppings. So no skimping! This velvety, creamy soup that surrounds tender chunks of potatoes, bacon and green onion, and then topped with cheese, more bacon and green onions is perfect when the weather isn’t. Truly, the ultimate comfort food, especially on a cold blustery day.
- 8 ounces bacon, diced (about 8 slices)
- 3 large russet potatoes, about 1 pound, peeled and cut into 1/2-inch pieces (about 3 cups)
- 3 green onions, chopped and divided
- 1/2 teaspoon salt
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups chicken stock
- 2 cups milk
- 1 1/2 cups shredded Cheddar cheese, divided
- sour cream, optional

Cook the bacon in a 4-quart saucepan over medium heat until crisp, stirring often. Remove the bacon from the saucepan and drain on paper towels.

Add potatoes, half the green onions and salt to the saucepan and cook for 3 minutes. Add the flour and garlic and cook stirring constantly for 1 minute.

Stir in the broth and milk and cook until the mixture boils and thickens. Reduce the heat to low. Simmer, covered, stirring occasionally until the potatoes are tender, about 20 minutes.

Stir in half the bacon and half the cheese.

To serve, ladle into bowls and top with remaining bacon, cheese and green onions. Top with sour cream if desired.
