Tis the season of pumpkin everything, but how far is too far? Pumpkin on pizza? I say, absolutely!
This recipe for Pumpkin Pizza with Caramelized Onions & Smoked Gouda, that I developed for Green Giant, uses pumpkin as the base for savory onions and smoky Gouda. Best of all, these delicious ingredients are spread all over Green Giant’s brand new Cauliflower Pizza Crust. The Pizza Crust is hitting supermarkets this fall. It’s made with more than 80% cauliflower and is crisp and delicious. A dusting of cornmeal on the bottom makes it feel even more like your eating a traditional pizza crust, but with half the calories.
If you have a pizza stone or rack, bake the crust directly on that. If you don’t, preheat your baking sheet while the oven preheats to make the crust crisper. It’s a little too fragile to back it directly on the oven rack.
I have to confess, I’m a bit obsessed with this cauliflower crust, it’s great for pizza, but has plenty of other potential uses too, so stay tuned!
- 1 Green Giant® Cauliflower Pizza Crust - Original
- 1 tablespoon butter
- 1 large sweet onion , sliced
- 3/4 cup canned pumpkin
- 1 garlic clove , minced
- ½ teaspoon dried thyme
- ½ cup shredded smoked gouda

Preheat oven to 425°F. Place Green Giant® Cauliflower Pizza Crust on baking sheet and bake 15 minutes.

Meanwhile, heat butter in large nonstick skillet over medium heat. Add onion, season with salt and cook 15 minutes or until very tender, stirring occasionally.

Combine pumpkin, garlic and thyme and season with salt and pepper.

Remove pizza crust from oven and spread pumpkin mixture over crust. Top with onions and cheese.

Bake 6 minutes or until cheese is melted.
