You don’t have to be a kid to love this recipe for S’mores Squares, that I developed for Baker’s Joy. Adults will love them too! These S’mores Cookie Bars have all of the fabulous flavors of a s’more, but no fire is needed. This recipe is so easy to pull together, you can even have the kids help out with this one. They’ll love sprinkling the marshmallow and chocolate chunks over the buttery graham cracker crust.
S’mores Squares are the perfect dessert for everyday or for casual summer get-togethers. They travel well too, so bring them to your next barbecue or pack them up for the beach.
- 1 can Baker's Joy¨ non-stick spray with flour
- 1 3/4 cups all-purpose flour
- 1-1/4 cups graham cracker crumbs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter , softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 package 11.5 oz chocolate chunks
- 1 cup mini marshmallows

Preheat oven to 350˚F. Spray 9 x 13-inch pan with Baker's Joy spray.

Combine flour, graham cracker crumbs, baking powder, baking soda and salt; set aside.

Beat butter with sugars in a large bowl with electric mixer until light and fluffy. Beat in eggs, then vanilla. Add flour mixture and beat just until combined. Stir in 1 cup chocolate chunks.

Spread batter into prepared pan. Sprinkle remaining chocolate chunks and marshmallows evenly over batter. Bake 25 to 30 minutes or until golden brown. Cool completely in pan on wire rack. Cut into 2-inch squares.
