Whether you need a delicious recipe for entertaining or an easy meal for any night of the week, my recipe for BBQ Beef is just what you’re looking for. It uses only 3 ingredients, so takes just minutes to pull together and then lets your slow cooker do all of the work.
Just place a chuck roast in your slow cooker, add some barbecue sauce and canned tomatoes…then set it and forget it. It’s so simple, you can get this going before work and come home to a dinner that’s ready to eat.
It’s also great for summer barbecues when you don’t want to be slave to the grill. You can even make this the day before. I served it here on slider buns, but you can serve in tortillas, over rice or over mashed cauliflower if you’re watching those carbs.
If you happen to have any leftovers, this also freezes well. I just put the leftovers in small plastic containers and freeze for those nights when I need something in a hurry.
- 2-1/2 pounds beef chuck
- 1 can (14.5 oz.) diced tomatoes with juice
- 3/4 cup of your favorite barbecue sauce

Place beef in slow cooker, add tomatoes and barbecue sauce. Cover and cook on Low 8 to 10 hours or High 4 to 6 hours or until beef is very tender.

Remove beef from slow cooker and shred using 2 forks. Skim fat from juices then return beef to slow cooker.

Serve beef on buns and top with shredded cabbage or cole slaw if desired. Also tastes great in tortillas or over rice or polenta.
