I’ve had my Instant Pot for a few months now, and I’m happy to say that it’s earned a coveted spot right on my counter. I find that I use it much more than my slow cooker. It’s great for that crunch time when you really need to get dinner on the table quick. And that’s even more of a bonus while I’m following the Whole 30 plan, since I’ve been cooking dinner nearly every night.
With all of the cold weather we’ve been having, soup has definitely been in my recipe repertoire. One of my favorite soups is Chicken Tortilla Soup, but with corn, beans and tortilla chips it definitely doesn’t fit with the Whole30 plan. I’ve taken the basic flavors of a tortilla soup and replaced the corn and beans with nutrient packed sweet potatoes and kale. I have to say, I think I like this version even better! I like it so much, I’ve been eating it for breakfast, lunch and dinner! And I’m not tired of it yet.
This makes enough to feed six and even though there are only two of us, I make the whole recipe, since it’s perfect to pack for lunch or freeze in plastic containers for those times when you just don’t have the time to cook.
This Whole30 compliant soup is hearty and delicious and ready in no-time, thanks to the instant pot.
- 1 1/2 pounds boneless skinless chicken thighs or breasts
- 3 sweet potatoes , peeled and cut into large chunks
- 6 cups chicken stock or broth
- 1 14 1/2-ounce can diced tomatoes
- 1 medium onion , chopped
- 3 cloves garlic , chopped
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 4 cups fresh baby kale or spinach

Arrange chicken and sweet potatoes in instant pot or pressure cooker. Add chicken stock, tomatoes, onion, garlic, chili powder and cumin. Season to taste with salt and pepper.

Lock lid in place, select High Pressure, and cook 10 minutes. Allow pressure to slow release for 10 minutes and then release pressure using quick release.

Remove chicken. Set instant pot to saute or simmer setting and add kale. Shred chicken using 2 forks then add back to pot. Simmer soup 2 minutes or until kale is just wilted.
