Tender brioche buns make the base for this sandwich, the tender bun adds just a bit of sweetness. Prosciutto delivers a savory, salty note and Beemster adds the melty, cheesy goodness that makes everything irresistible. I’ve rounded this sandwich out with little bit of spinach and tomato to help start the New Year off right Top all of that off with a fried egg and you have the perfect breakfast sandwich!
- 2/3 cup grated Beemster Vlaskaas
- 2 brioche buns
- 2 eggs
- 1 tablespoon butter
- 2 ounces thinly sliced prosciutto
- 4 thin slices tomato
- 1/2 cup baby spinach

Preheat oven or toaster oven to 350°F. Arrange buns, cut sides up, on baking sheet. Top with grated Beemster. Bake 5 minutes or just until cheese melts.

Meanwhile, melt butter in large nonstick skillet. Fry eggs over medium heat to desired doneness.

Arrange tomato, spinach and prosciutto evenly on bottom of buns. Top with eggs and bun tops.
