Makes 4 servings
¼ cup lime juice
2 tablespoon vegetable oil
2 Tbsp. Mrs. Dash Spicy Jalapeno Seasoning Blend
1 lb. mahi mahi or firm white fish
4 cups shredded cabbage or cole slaw blend
2 tablespoons chopped fresh cilantro
Corn tortillas, warmed
Combine lime juice, oil and Mrs. Dash Spicy Jalapeno Seasoning Blend.
Arrange fish in shallow bowl and pour half of lime juice mixture over fish, turning to coat. Let fish marinate 10 to 30 minutes.
Combine shredded cabbage with remaining lime juice mixture; toss to coat.
Heat nonstick skillet over medium heat, add fish and cook 4 minutes. Turn fish over and pour any remaining marinade over fish. Cook 4 minutes or until fish flakes easily with a fork.
Serve fish and slaw in corn tortillas with guacamole, if desired.
Tip: Leftover margarita mix (with or without the tequila) is great for a quick and easy marinade for fish taco’s. Use it instead of lime and oil in this recipe.
