Cream of Rice makes these onion rings extra crispy outside but so tender inside.

Makes 6 servings
1-1/2 cups Cream of Rice® Hot Cereal, uncooked
1 tsp. paprika
1 tsp. garlic powder
1 tsp. salt
2 large eggs
2 Tbsp. milk
2 large sweet onions, sliced into ½ inch-thick rings
Vegetable oil, for frying
Combine Cream of Rice, paprika, garlic powder and salt in a shallow bowl; set aside. Beat eggs with milk in a shallow bowl.
Add about ½- inch oil to large, deep skillet and heat over medium heat until hot. Working in batches, dip onion rings into egg then coat in Cream of Rice mixture. Gently drop into oil and cook about 8 minutes turning once, until golden brown and onion is tender. Do not overcrowd skillet. Repeat with remaining onions.
Drain on paper towels. Sprinkle with additional salt and serve with ketchup or your favorite dipping sauce.
